Our goal was to create a soup that hits the spot when the craving strikes for this velvety and comforting soup. So we spent a lot of time trying the soup at Panera, dissecting its ingredients, and recreating the recipe over and over.

Fall is my absolute favorite season in Tennessee. All year long I anticipate those short couple months were the air is crisp and the colors on the trees are bright orange and red. I also really love the food and flavors that come with fall time. Well right now it really hasn’t reached cool weather status but I still have been craving fall foods. I’ve been making soups and stews for the past month. Recently my husband saw a recipe post from slim palate for salted caramel apple tartlets. He printed it off and stuck it on the refrigerator as a reminder that I need to make them. So every day I go to the refrigerator and am taunted with this apple tart recipe. I will make them for him eventually but honestly haven’t had the spare time dig in to grain free pastry. So I decided to fill this apple pie craving with smoothie. I tried to encompass all the flavors in to one tasty drink. Also, it still hasn’t really cooled down in Nashville so a cold smoothie is still refreshing. So if you are still in warm weather this is a great transitional drink from summer to fall.

This Roasted Squash Soup is thick, creamy and full of flavor! Literally fall in a bowl of delicious, cozy goodness. I like to garnish it with crispy bacon, pepitas and fried sage because why not?! You can use any kind of squash like. Butternut, acorn, carnival or delicata. Whatever combination you choose! if you love squash you have to try this soup!

I really love the combination of kale and butternut so this soup was really the perfect comfort food for me as I fight off this cold I also really try and up my green intake when I start to feel sick. It seems to always help. This soup also tastes like an upgraded and healthier version of chicken noodle soup. You can always throw in more of your favorite fall/winter vegetables to add more variety and nutrients to the soup!
Spicy Chicken Avocado Soup
We have a love of most things that fall into the Mexican food category. For some of our family that also means very spicy! We most certainly inherited that from my mom and Makenna’s grandma. This coup can be made as spicy or non spicy as you’d like. Just adjust the amount of jalapeno and chipotle chile flakes you add or completely omit! The chipotle does add some yummy smokiness to the flavor of the soup. So maybe adjust the jalapeno first and just go easy on the chile flakes? Your choice of course, start with a little and then adjust as your taste buds allow! We like to top this soup with crunchy, fresh and bright flavors. Some of our favorites: sliced radishes, chopped green onions, chopped cilantro, diced tomatoes, diced avocado or plantain chips for some serious crunch! Don’t forget the squeeze of fresh lime juice and maybe a swirl of your favorite non dairy creamer! Enjoy!
